Peanut Noodle Stir Fry

 ¼ cup peanut butter
 1 tbsp rice vinegar
 2 tbsp soy sauce
 1 tbsp honey
 ¼ tsp ground ginger
 6 cups water
 8 oz. spaghetti or rice noodles
 1 tbsp cooking oil
 1 16-oz. bag frozen stir fry vegetables
 Chopped peanuts, optional
 Fresh cilantro, optional

1. In a small bowl, whisk together peanut butter, rice vinegar, soy sauce, honey, and ginger until smooth. Set aside.
2. In a large pot, bring 6 cups of water to a boil over high heat.
3. Add spaghetti or noodles and cook according to package instructions. Drain and set aside.
4. While the noodles cook, heat oil in a large saucepan over medium-high heat.
5. Add stir fry vegetables and sauté until tender, about 6-8 minutes.
6. Reduce heat to low. Stir in noodles and peanut sauce until combined.
7. Top with chopped peanuts and fresh cilantro before serving, if desired.
