FBR is raising funds for a community kitchen which we would use to prepare meals for our Nutrition Netword, including Kid's Cafe. We would also prepare ripe fruits and vegetables, giving them longer shelf life and reducing waste from spoilage.

Stuffed Baked Potatoes
4 baking potatoes
1 1/2 tsps. olive oil
1/2 pound of mushrooms, sliced
1 lb. frozen spinach
1 tbs. white wine vinegar
8 ounces of your choice of cheese, grated
1 tbs. fresh thyme leaves
salt and pepper
2 tbs. butter
Bake potatoes in 400 degree oven for about 50 minutes.
Meanwhile, in a large skillet, heat 1 tbs. olive oil over medium heat and add mushrooms. Cook until softened, about 5 minutes. Transfer to a large bowl.
Add remaining olive oil to skillet, add the frozen spinach and cook about 3-4 minutes. Stir in vinegar and cook 1 minute. Add spinach to mushrooms; add cheese and stir until cheese is mostly melted. Stir in thyme leaves and season with salt and pepper.
Cut a deep "x" into each of the potatoes and carefully squeeze from the bottoms to open. Add 1/2 tbs. butter to each potato then generously stuff with spinach mixture.
Serves 4.
